Cake Recipes Without Eggs

Mary asks…

Yummy cake recipe without eggs?

At my son’s day care center, there is a little boy in his class that is allergic to eggs. I always feel bad when there is a party and all of the other kids are eating cake & ice cream, but he has to have graham crackers because of his egg allergy. My son’s birthday is next month, and I’ll be bringing in a cake for the a party, and I would really like to be able to include this kid too. I asked his mother if she new of any special treats that he could have, and she doesn’t have any good recipies either and joked about needing to find a vegan baking cook book. Does anyone out there know of any cake recipies that taste great, but don’t have eggs in them?

Here is recipe developed during world war two, in response to the rationing of eggs. My aunt makes a cake like this for my cousin who is vegan, and the rest of us love it too! Good luck…

Crosby’s Mother’s WW II Cake

1 1/2 cups flour
1 cup sugar
3 Tablespoons cocoa
1 teaspoon baking soda
1/2 teaspoon salt
6 Tablespoons oil (assume an oil with no flavor)
1 Tablespoon vinegar (assume a mild vinegar like white vinegar)
1 teaspoon vanilla
1 cup cold water

Preheat oven to 350 Fahrenheit. Put dry ingredients in sifter. Sift into ungreased cake pan (8″ x 8″). Make 3 holes in dry mixture. Pour oil into first hole, vinegar into second, and vanilla into third. Pour water over all. Stir with fork until evenly blended. Bake 35 – 40 minutes at 350 degrees. Invert to cool or frost right in pan.

Recipes for a cake and desserts without using eggs or cow’s milk?

My daughter’s are both allergic to cow’s milk and eggs. I would like to get a recipe for a cake and other desserts that I can make for them. It’s been hard for birthdays and special occassions when they see other kids eating cake and ice-cream.They are also allergic to tree nuts as well.

Frannie answers:

Here’s a recipe for you:

Get 2 lbs of the following fruits:
Watermelon
Honeydrew Melon
Kiwi
Mango
Strawberry
Papaya
Peaches
Oranges
or Segments from 2 Lemons or 2 Limes

1 to 1 1/2 cups of sugar water (or just water if you dislike sweet)
Juice from 1 lemon or lime (except when you are making Lemon or Lime Shorbet)

Methods:

1. Puree your fruit of choice with cooled sugar water
2. Pour in a container and put in freezer uncover for 3 hours.
3. After 3 hours, take the batch out and either mix with the food processor to break up the ice crystal until the mixture form a smooth surface.
4. Put back in the fridge and freeze uncover for another 3 to 4 hours.
5. Cover the shorbet until ready to eat.

This will be good for a cool summer treat. You can also make this into the ice cube tray and wrap with plastic wrap and put 1 toothpick or cocktail stick on each ice cube before putting back ing the fridge the second time.

I need some recipes without eggs, dairy, soy, or nuts.?

My daughter is 2 and extremely allergic to eggs, all dairy, soy and nuts. She and I are getting bored of plain meats and plain veggies. Anyone have a chicken nugget recipe? Or maybe a cake recipe? Any other ideas would be great!
We just had allergy testing done this week and she still has these issues. Hopefully one day she will outgrow them.

Frannie answers:

There are many vegan recipe books which would exclude eggs and dairy. What do you want to make? One of my favorites for hot weather is a ‘smoothie’ Put 1/2 cup cooked oatmeal a dash of salt a tsp vanilla some applesauce if it is handy about 3 frozen bananas and a cup of frozen blueberries in a blender (assuming you have a pretty good blender), and make the blender work for a living. I eat it over cornflakes.

Looking for a carrot cake recipe without eggs, sugar, and milk. (allergies). Help?

I have tried w/honey & also w/maple syrup. These work OK, but my cake doesn’t rise very well.
My recipe doesn’t call for milk; just didn’t want to get answers that did.
I’ve tried egg replacer; that worked OK. I also tried tofu in place of eggs; that seemed to work OK. I guess I’m looking for suggestions on how to make the cake rise better – it calls for 2 t of baking soda for a 9×13 pan. Also, it seems a little dense. Maybe more flower would help?
I’ve been reading vegan cookbooks for about 6 months now – ever since I got my allergy testing results. However, the problem I still run into is the sugar and what to substitute for it.
I can’t use Splenda/sucralose – it’s made from sugar.

Consult a vegan or vegan recipe website.

Tres leches cake without egg?

I found a recipe some time ago, I think it was on someon’s blog, for a tres leches cake recipe. Without being a vegan recipe in particular, it didn’t use eggs, which most recipes for this cake do, and some use very many! Does anyone know of this version of the recipe?

Frannie answers:

Any kind of cake can be used for this delicious dessert. The milks are poured over the base cake. To soak in and make it soupy.

Here are some eggless cake recipes. Maybe one of them will suit your purposes.

Does anyone have a recipe for a light sponge cake without eggs?

I want to make a cake for my boyfriend’s mum and step dad as it is their second wedding anniversary on Thursday. My boyfriend’s step dad is allergic to eggs. I’ve made cakes in the past without eggs during cooking lessons at school and they have always been really heavy, but I want to make a light cake.

Frannie answers:

Well i’ve got two for you :) Up to you which one you choose, but there both as good as each other.

FIRST:

2 tsp Baking Powder
175g/6oz Caster Sugar
6 tbsp Sunflower Oil
240ml/8fl.oz. Water
1 tsp Vanilla Extract
4 tbsp Strawberry or Raspberry Jam

2. Sift the flour and baking powder into a large mixing bowl, stirring in any remaining bran from the sieve then stir in the caster sugar.

3. Add the oil, water and vanilla extract and mix well with a wooden spoon, until the mixture is smooth.

4. Divide the mixture equally between the two prepared tins and bake for 25-30 minutes until golden brown or until the centre of the sponge springs back when lightly touched.

5. Allow the sponges to cool before turning out and transferring to a wire rack.

6. To serve, remove the parchment from the sponges then place one of the sponges onto a serving plate, spread with the jam, then put the other sponge on top to sandwich it. Dust with icing sugar before serving.

SECOND:
* 200 g sweetened condensed milk
* 140 g self-rising flour
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 60 ml melted butter or margarine
* 1 teaspoon vanilla essence
* 75 ml water

Sieve the flour, baking powder and baking soda together.
Mix the flour mixture, condensed milk, melted butter, essence, and water and beat well.

Bake in a hot oven at 200 degrees C (400 degrees F) for 10 minutes.
Then reduce the temperature to 150 degrees C (300 degree F) and bake for a further 10 minutes.
The cake is ready when it leaves the sides of the tin and is springy to touch.

Donna asks…

Have you got a recipe for a frozen no-cook cake made without eggs?

I like the Rocky Road frozen cake, though it’s made with melted chocolate, but there must be other egg-free recipes!!!!!!
P.S. The Rocky Road I have tried is sold in Starbucks and it’s good but it contains marshmallows which are unlikely to be veggie.

Frannie answers:

Here’s one for a chocolate peppermint cake: http://www.veganchef.com/cpcfantasy.htm
(You’d have to substitute a packaged chocolate cake for the recipe or wing it with Fabe’s chocolate cookies or something)

A frozen chocolate souffle: http://www.thatsmyhome.com/sweetspot/frozen-chocolate-souffle.htm

If you do a recipe search for “vegan” items they will for sure not have egg in them.
Good luck!
That rocky road cake sounds yummy.
