Recipe For Cake Balls

Ruth asks…
what should cake balls texture be like?
I saw the recipe online at few different websites and all posters gave rave reviews. I mixed 1 box cake mix and 16oz dulche de leche. When I mixed the two together I got a doughy texture. Experimented with various mixtures and each time I got dough balls. Is this what everyone thinks is so delicious or am I missing something. Also saw recipes w/ frosting. I think that is too much in one bite for me.

Frannie answers:
It depends on the recipe that people make and the taste varies from person to person, some like things very sweet and others don’t , if you add dulce the leche in the cake you will have a creamy inside, if you rather have a sort of truffle you need to cut down on the Leche and add something to absorb the moisture like vanilla wafers crumbs, shape them into balls and roll them into nuts or dip into chocolate
Look at this one here,
I don’t use the wax just the chocolates

Helen asks…
Has anyone tried making cake balls?
My recipe calls for 1 cake crumbled, 1 jar of icing, (i was thinking of using homemade butter creamm) scoop into a ball and freeze. Then dip in chocolate. Has anyone tried these? Or does anyone have any other ideas?

Frannie answers:
I’ve made this recipe.

It is so easy to make. Homemade frosting would be good as long as its thick speading type. Coconut, crushed nuts, candy, like M&Ms, can also be used to roll the balls in.
I wonder how spice or carrot cake with raisins (minced in food processor) then make homemade cream cheese frosting would work; it sounds good.
Could do a half and half dip. Dip one half in chocolate, let dry; then half in vanilla; it would be unique.
This recipe reminds me of donut holes, like you get at the bakery, only better.

Sandy asks…
Recipe for a cookie made with a choc cake mix, cream cheese, rolled into balls and rolled in powdered sugar?
You chill the dough and roll it into balls and then into powdered sugar before baking. When they bake they “break” open and look dry on the outside and moist inside. I can’t find my recipe and need it for a cookie exchange this weekend. I hope you can help.

Frannie answers:
Box of moist choc. Cake mix
1 egg
1 package cream cheese, room temp
1 stick of butter, room temp
1 tsp vanilla
Cream butter and cream cheese, then add egg, then vanilla. Add cake mix and then put in frig to chill for a few hours. (
Roll chilled balls of dough in powdered sugar…..bake for about 12 minutes at 350.

I’m looking for the “Marzipan Fruit Cake” Recipe from Nigella Lawson’s How to be a Domestic Goddess?
She calls it Marzipan Fruit Cake, and it has balls of marzipan IN the cake. Can anyone pass the recipe on to me? Please?

Frannie answers:
From http://www.nibblous.com/index.cfm/RecordID.7/whattype.recipe/id.378
…note that this needs to be started *at least* 24 hours before you want to consume it.
Ingredients / recipe
150g sultanas
100g natural coloured glace cherries, halved
150g dried pears, chopped
100ml white rum
250g marzipan
50g ground almonds
zest of 1 lemon
175g plain flour
100g caster sugar
100g butter
2 large eggs
1 tsp orange flower water
20cm spring form cake tin, buttered and lined bottom and sides, so that the parchment comes a good 10cm above the rim
the night before, mix sultanas, glace cherries and dried pears in a large bowl, cover with the rum. Dice the marzipan and put it in the freezer. Leave both to soak and freeze overnight.
Next day, preheat oven to 140/gas 1. Beat together almonds, lemon zest, sugar, flour, butter and eggs. Add drained fruit, orange flower water and frozen marzipan. Put the mixture into the tin, levelling the surface, and making a slight indent in the middle to get an even surface when cooked.
Bake for 2 – 2 1/2 hours, or until skewer comes out clean. Do not overcook, as it will continue to cook in its own heat for a bit. But don’t worry – there’s enough dried fruit and marzipan to stop anyone complaining that the cake is dry.
Allow to cool in the tin, rewrap in parchment and foil to store for about a week. Although Nigella does say that she’s never managed more than two days’ storage …
